The surprise dessert for your guests: fluffy Victorian-style cake.

If you want to be original on your special day, and considering that you have chosen a Victorian Quinceañera theme, you should choose a traditional British dessert: a fluffy Victorian-style cake. This delight is one of Britain's favorite desserts to accompany afternoon tea and, in addition to being delicious, it is incredibly easy to prepare. The cake consists of two layers of cake interspersed with jam and buttercream. There are variations in the recipe with some people using fresh fruit or cream in the filling, but this is a classic:

  1. Preheat the oven to 350°F and prepare two round aluminum baking pans, greasing and flouring them.
  2. Beat the butter and sugar. Make sure the sugar is well mixed with the butter. The texture should be light and fluffy.
  3. Crack and put four eggs in a separate bowl, making sure to remove any bits of shell. With the mixer on low speed, add the eggs one at a time to the batter. After adding each egg, mix well to ensure it is fully incorporated before adding the next one.
  4. Sift the flour and baking powder together and add the mixture to the batter. If you sift the flour a couple of times, you will get more air and the result will be a lighter cake.
  5. Mix until the flour is incorporated and then add the milk. Stir the milk into the cake batter.
  6. Divide the cake batter as evenly as possible between the two prepared pans and place them in the oven for about 25 minutes. It's safer to check the cakes after 20 minutes and give them an additional 5 minutes if necessary. The cakes are ready when a toothpick inserted into the center comes out clean. The cakes should be springy to the touch.
  7. After removing from the oven, leave the pans for 5 minutes before transferring them to a wire rack to cool completely.
  8. Once completely cool, spread raspberry jam (or any other type you like) on one half. Spread buttercream on the other half of the cake and then carefully sandwich the two layers together. Lightly sprinkle the top with powdered sugar and you're ready to serve.
